Rumblings and stirrings

Im all by myself again this week, and not really inclined to do much cooking, but two websites provided inspiration for this week’s menu.

From 101 Cookbooks I got an amazing lentil soup recipe, the Lively Yourself Up Lentil Soup. I have to admit, I was not really expecting much from this soup, I have never been a big lentil fan, but have been getting into dahl more and more lately. But I have so much study to do, and little motivation to cook, and I thought I would juve this one a try. I have to say it was much much better than I thoguht it would be. I made a mistake with the quantity of tomatoes and only put one can in when there should have been two, so it came out a little bland. I added some chicken stock to boost the flavour and it sudeenly got a lot better. But the saffron yoghurt!!! OMG!!! And OMG again!!! It turned the soup into a whole new creation, so delicious! I also tried the fried butternut cubes, as well as the yoghurt, and that was amazing too. I have some chive yoghurt ready to go into the next batch I unfreeze (tonight) and will probably do some more Cauliflower Popcorn to go in there as well. I now understand how a person could eat this several times a week. The yoghurt is very necessary tho.

The other website that provided some food inspiration was the Pioneer Woman. I had some pork medallions and wasnt sure what to do with them. I adapted this recipie for pan-fried pork chops and served it with more fried butternut cubes together with some Cauliflower Popcorn from 101 Cookbooks again. I also chucked some little cubes of potato in there with the cauli and that worked well.

Yum. Im hungry all over again now!
