Lentils and Veg for OneCategories: Home Economics
Cooking for one is a drag, but I’m starting to get a few little dishes together that make it a bit easier. This is an original creation, tho i have to say its not very original… I usually make it as a side dish for lamb chops marinated in olive oil, balsamic vinegar and garlic, but it works well as a vegetarian dish on its own.
small nob of butter/olive oil/ghee
1 small onion or half a larger one
ground black pepper
1/2 cup red lentils
small chunk of any or all of the following vegies: sweet potato, pumpkin, carrot
(and maybe) 1 small potato
1/2 tsp tumeric
1/2 tsp ground coriander
1/2 tsp cumin
1 and a bit cup water
Chop the onion finely and saute in the butter/oil in your smallest lidded saucepan. While its browning, chop up the rest of the vegies. I usually slice the potato thinly with the skin on, and chop the other vegies into medium size chunks, with a few thin or small chunks that will disintergrate and thicken it all up at the end. When the onion is brown, stir in the lentils, vegies, spices and water. Cover and bring to the boil, reduce the heat to very low and simmer for 12-15 mins. This is a good time to put the meat on to grill. When its done, give it a stir to smash up the vegies a bit, and maybe a sprinkle of fresh chopped parsley...?
This is such an easy dish, you could maybe even dash off a quick blog entry while you are cooking it!

I always have big problems with portion size when cooking for 1 or 2 people… I don’t like to only use half a carrot etc so I just chop it all up and then find that there is too much. Fortunately, we can take the leftovers for lunch the next day.
